Vegetable Soup with
Applewood Smoked Cheese Croutons
When faced with a huge amount of various vegetables and freezing weather a gorgeous vegetable soup sprang to mind, so here’s my version, which you can add or remove any of the vegetables to your own tastes.
2 med potatoes,
a small pack of fresh peas,
salt and pepper to taste
Chop everything into even sized pieces so they cook evenly and add all the vegetables, except the aubergine and the peas to a pan and top up with boiling water,
Bring to the boil and simmer for 10 mins and add the aubergine, continue cooking for another 10 mins then add the peas, check the harder veggies are cooked before adding them as they only take a few mins to heat through.
I added no stock to it, I just used the plain water as I prefer to taste the vegetables than tasting the stock.
I wasn’t sure how the aubergine would work but it worked well as it soaked up all the flavours.
I love croutons but tend to find them a bit greasy so here’s my take on croutons.
Toast a slice of bread (both sides) then spread liberally with Applewood Smoked Cheese spread and place under a hot grill, now keep you eye on it cos it browns quite quickly.
After grilling it I cut it into small cubes and popped it on top of the soup. Mmmmmmmmmm is all I can say!
