You can’t beat comforting home cooked food especially in this yucky weather and mushroom soup is one of my favourites. It’s so easy to prepare and as usual I make plenty so I can freeze it.

Homemade Mushroom Soup is so simple, easy and so tasty.

Here is my recipe:-

Homemade Mushroom Soup

4 packets of basic mushrooms, chopped
4 medium potatoes, skin on, chopped.
2 large onions, chopped.
4 cloves of garlic, roughly chopped.
2 cubes of frozen chilli paste.
¼ pint semi skimmed milk.
Salt and pepper to taste.

Method.

Put all the ingredients into a large saucepan, bring to a boil, then turn it down to a low simmer.

Cook for about 30-40mins till the potatoes are cooked through.

I use a hand blender to blitz it, but you can use a food processor or liquidizer, blend till smooth.

At this point I try it to see what seasoning it needs, then add salt and pepper as required.

I made more than I had planned as when I popped into the supermarket they had the mushrooms reduced half price so I grabbed another 2 packs, so normally it would only be half the ingredients.

I served it with some crusty granary bread and it went down extremely well and was really filling. 

I’ve got 4 bags in the freezer to just re-heat when we want them.
